Looking for a healthier dinner entrée? This tasty Three Cheese Tortellini & Vegetable Primavera from Barilla is a great vegetarian option.


  • 1 package Barilla® Three Cheese Tortellini 
  • 1/2 Bunch Asparagus
  • 1/2 CUP Scallion White Part Only
  • 3 Tablespoons Extra Virgin Olive Oil
  • 1 Small Zucchini Diced Seeded
  • 2 Plum Tomatoes Diced Peeled
  • 1/2 Cup Parmigiano-Reggiano Cheese Grated


  1. Bring a large pot of water to a boil
  2. Remove the asparagus tips and cut the remaining part into ¼ inch long pieces
  3. Slice scallions into small rings
  4. Sauté the scallions, zucchini and asparagus in oil in a medium skillet over medium heat for about 8 minutes
  5. Add tomatoes and sauté for 2 more minutes
  6. Season with salt and pepper
  7. Cook Three Cheese Tortellini according to package directions
  8. Drain and add to the vegetable sauce
  9. Sprinkle with cheese and serve
