Watermelon Feta Salad


Sweet and salty combine for a superb summer salad from Madhava Sweeteners, made with crisp watermelon, refreshing mint and a drizzle of homemade lemon balsamic.


  • 1/2 mini watermelon
  • 4 tomatoes
  • 1/2 small red onion
  • 1 block feta
  • 1/2 package fresh mint
  • 1/2 package fresh basil
  • juice of 3/4 lemon
  • 1 cup olive oil
  • 1/3 cup balsamic vinegar
  • 2 tbsp Golden Light Agave
  • salt & pepper


  1. Watermelon Feta Salad: Cut watermelon, tomato (seeds removed), red onion and feta into similar sized cubes. Gently rinse, pat dry and tear fresh basil and mint. Toss all ingredients together and set aside.
  2. Lemon Balsamic Vinaigrette: Whisk olive oil, balsamic, lemon juice, agave and salt & pepper vigorously to combine. Drizzle over watermelon salad.

Cooking Tip: If you are making this salad ahead of time, it is best to leave the feta and red onion of to the side until you are ready to serve.
